INGREDIENTS
Cherry Filling
- 🍒 3 cups sour cherries
- 🧂 6 tablespoons white sugar
- 1 1/2 tablespoons cornstarch
- 🍋 1 tablespoon fresh lemon juice
- 🧂 1 pinch salt
Crust and Topping
- 1 cup all-purpose flour
- 3/4 cup cornmeal
- 1/2 cup light brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 🧈 1/2 cup unsalted butter, melted and cooled
- 🥚 1 large egg yolk
- 1 1/2 teaspoons vanilla extract
STEPS
Preheat the oven to 350°F (175°C). Line an 8x8-inch square pan with parchment paper and lightly spray with nonstick spray.
In a large bowl, mix together cherries, granulated sugar, cornstarch, lemon juice, and a pinch of salt. Set aside.
In another large bowl, mix flour, cornmeal, brown sugar, baking soda, salt, and nutmeg. Add melted butter, egg yolk, and vanilla. Knead if needed.
Press 1 3/4 cups of the dough into an even layer in the prepared pan.
Pour the cherry mixture over the crust in an even layer. Crumble the remaining dough over the top.
Bake until golden and the cherries are bubbly, about 45 to 50 minutes.
Cool completely in the pan, then lift out using the parchment and cut into squares.
