INGREDIENTS
Steak mixture
- 🥩 1 pound 85% lean ground beef
- ½ cup plain bread crumbs
- 🥚 1 large egg, beaten
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dry mustard
- 1 teaspoon soy sauce
- ½ teaspoon freshly ground black pepper
- 1 pinch cayenne pepper, or to taste
Gravy
- 🧈 2 tablespoons salted butter
- 🍄 12 large white button mushrooms, sliced
- 🧅 1 cup diced onion
- 🧂 Salt to taste
- 2 tablespoons all-purpose flour
- 3 cups high-quality, low-sodium beef broth
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
STEPS
Mix ground beef, bread crumbs, egg, ketchup, Worcestershire sauce, dry mustard, soy sauce, pepper, and cayenne in a bowl until well combined. Cover and refrigerate for at least 2 hours or overnight.
For the gravy, melt butter in a skillet over high heat, sauté mushrooms and onions with salt until browned (5–8 mins). Reduce heat to medium, add flour, and cook for 3 minutes.
Add broth, ketchup, and Worcestershire sauce to the skillet. Simmer until the gravy thickens slightly (10 mins). Taste and adjust salt.
Divide the meat into four portions, form patties, and season lightly with salt.
Brown the patties in butter over medium-high heat (2–3 mins per side). Add gravy and simmer until steaks are cooked through, reaching 160°F (5 mins).
