INGREDIENTS
For the batter
- 🥛 1 cup milk
- 🥚 3 eggs
- 🧂 ½ teaspoon salt
- ¾ cup all-purpose flour
For the filling
- 🧀 2 cups cottage cheese
- 🥚 1 egg yolk
- 🧈 1 teaspoon melted butter
- 2 teaspoons white sugar
- 1 teaspoon lemon juice
- ½ teaspoon vanilla extract
For cooking and topping
- 🧈 2 tablespoons butter
- 2 tablespoons cinnamon sugar
STEPS
Blend milk, whole eggs, salt, and flour until smooth. Refrigerate batter for at least 20 minutes.
Mix cottage cheese, egg yolk, melted butter, sugar, lemon juice, and vanilla extract with an electric mixer until smooth to create filling.
Preheat the oven to 425°F (220°C). Lightly grease a baking sheet.
Cook crepes by pouring about 2 tablespoons of batter into a skillet over medium-high heat, tilt to coat, and cook for about 2 minutes until golden. Repeat for all crepes.
Fill crepes with 1–2 tablespoons of filling near one edge. Fold edges to seal and place seam-side down on the baking sheet.
Bake crepes in the oven for 10 minutes, sprinkle with cinnamon sugar, and bake an additional 5 minutes until lightly golden.
