INGREDIENTS
Main Ingredients
- 🥓 1 pound sliced bacon
- 🧅 1 large onion, chopped
- 🥔 5 medium potatoes, peeled and diced
- 💧 2 cups water
- 🐟 1 ½ pounds cod fillets, cut into 1 inch cubes
- 🥛 1 (12 fluid ounce) can evaporated milk
- 🥛 ½ cup whole milk
- 🧈 2 tablespoons butter
- 🧂 Salt to taste
- 🧂 Pepper to taste
STEPS
Cook bacon in a large stockpot over medium-high heat, turning occasionally, until evenly browned. This takes about 10 minutes. Drain on a paper towel-lined plate, crumble, and set aside. Reserve 1 tablespoon of bacon grease in the pot.
Add onion to the reserved bacon grease and stir over medium heat until tender, about 5 minutes.
Add diced potatoes to the pot and fill with just enough water to cover the potatoes. Bring to a boil and cook until the potatoes are almost tender, about 5 minutes.
Add the fish cubes, evaporated milk, whole milk, and butter to the pot. Bring to a boil, then reduce heat to low and let it simmer for 30 minutes. Season with salt and pepper.
Ladle chowder into bowls and top with crumbled bacon before serving.

💡 This recipe works best with fresh cod, but haddock or any other white fish is a good substitute.Serve the chowder with crackers or warm cornbread for a complete meal. For a richer flavor, you can add some fresh herbs such as thyme or parsley while simmering.
