INGREDIENTS
Seasoning & Garnish
- 🧂 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 4 sprigs fresh rosemary
- Chopped fresh rosemary for garnish
Cooking Ingredients
- 2 tablespoons vegetable oil
- 🧈 1 tablespoon butter
Aromatics
- 🧄 2 cloves garlic, thinly sliced
Main Protein
- 4 pork chops
STEPS
Take chops out of the refrigerator and let stand at room temperature for 30 minutes.
Cut vertical slits into the fat cap on the sides of the chops to prevent curling during cooking.
Blot chops dry with paper towels and sprinkle both sides with salt and pepper.
Heat a cast iron skillet over medium-high heat for 3 minutes.
Add oil to the skillet, and cook the pork chops for 2 minutes per side.
Add butter and garlic to the skillet.
Place rosemary sprigs on each chop. Baste chops with butter mixture occasionally while cooking for 2 minutes.
Turn chops, baste, and cook for an additional 2-3 minutes or until an internal temperature of 140°F (60°C) is reached.
Remove chops from the skillet, tent with foil, and let rest for 5 minutes.
Garnish with chopped rosemary before serving.
