INGREDIENTS
Base
- 🧈 3/4 cup unsalted butter
- 2/3 cup brown sugar, divided
- 🥚 1 large egg, room temperature
- 🥚 1 large egg yolk, room temperature
- 1 1/2 teaspoons vanilla extract
- 2/3 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 🧂 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 🥕 1 1/2 cups grated carrot
Frosting
- 8 ounces cream cheese
- 1 1/2 teaspoons vanilla extract
- 🧂 1 pinch salt
- 2 cups confectioners' sugar
STEPS
Melt butter in a saucepan over medium heat. Cook and stir until browned and nutty, approximately 300 seconds. Reserve 1/4 cup for frosting and let the rest cool for 600 seconds.
Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment paper for easy removal.
Combine brown butter and 1/3 cup brown sugar in a bowl. Whisk in egg, egg yolk, vanilla, and mix until smooth. Fold in flour, baking soda, spices, and carrots. Spread batter evenly in the pan.
Bake for 25 to 30 minutes or until lightly springy in the center. Cool bars in the pan for 600 seconds, then remove to a rack to cool completely.
Prepare frosting: Beat cream cheese until smooth. Add reserved brown butter, vanilla extract, salt, and 1 cup powdered sugar. Beat until well blended, then add the remaining powdered sugar and mix again until fluffy.
Spread cooled bars with frosting. Chill in refrigerator for 3600 seconds before cutting into 16 bars.
