INGREDIENTS
Vegetables
- 4 large portobello mushrooms
- 🍅 1/2 cup cherry tomatoes, halved
- Fresh basil leaves (for garnish)

- 4 slices fresh mozzarella
Condiments
- 4 teaspoons olive oil
- 1 tablespoon balsamic glaze, or as needed

STEPS
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Remove mushroom stems and gills. Place mushrooms cap-side down on a wire rack over the prepared baking sheet.
Bake mushrooms in the preheated oven for 15 minutes to release liquid.
Meanwhile, whisk olive oil with minced garlic, seasoning with salt and pepper.
Drain liquid from mushrooms, flip them over, and place a mozzarella slice in each cavity. Drizzle with garlic-olive oil mixture.
Preheat the broiler and position a rack about 6 inches from the heat.
Broil mushrooms until cheese turns golden, about 5 minutes.
Prepare tomato mixture by combining cherry tomatoes and cubed fresh mozzarella in a bowl. Spoon onto mushroom caps, garnish with basil, and drizzle balsamic glaze.
