Bake the roast for 1 hour. Remove the aluminum foil and baste the meat with pan juices. Return the pan uncovered to the oven and continue roasting until an instant-read meat thermometer inserted into the thickest part of the roast reads 130–135°F (54–57°C) for medium-rare, about 1 more hour.

Remove the roast from the oven, tent it with aluminum foil, and let it rest for 20–30 minutes. The internal temperature will rise to 140–145°F (60–65°C).
