INGREDIENTS
Base Ingredients
- 2 pounds ground beef
- 🥚 2 large eggs
- 3 slices white bread
- 🥛 1 1/2 cups milk
Vegetables

- 4 cloves garlic
Spices and Flavorings
- 2 teaspoons kosher salt
- 5 teaspoons curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground black pepper
- 1 teaspoon dried oregano
- 1 pinch cayenne pepper
Liquids and Additional Flavor Enhancers
- 1 tablespoon olive oil
- 🧈 1 tablespoon butter
- 🍅 1 tablespoon tomato paste
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon wine vinegar
- 1/2 teaspoon Worcestershire sauce
- 1/3 cup chutney
STEPS
Preheat the oven to 350°F (175°C).
Heat olive oil and butter in a large oven-proof skillet over medium heat. Add onions and salt, cooking until translucent for 3 to 5 minutes.
Stir in curry powder, cumin, turmeric, black pepper, and oregano, and cook for 1 to 2 minutes.
Add ground beef and cook, breaking into crumbles. Add bay leaf, tomato paste, and garlic, cooking for 2 minutes.
Mix in lemon juice, zest, vinegar, Worcestershire sauce, and chutney. Simmer gently for 5 minutes.
Soak bread in 1/2 cup of milk for 5 minutes. Mash and integrate soaked bread into the meat.
Whisk remaining milk, eggs, cayenne, and a pinch of salt. Pour mixture over meat and top with bay leaves.
Bake in the oven until custard is set and lightly golden, about 45 minutes. Let rest for 5 minutes before serving.
