INGREDIENTS
Crust
- 🍪 ½ (14.4 ounce) package graham crackers, coarsely broken
- 🍚 3 tablespoons white sugar
- 🌰 ¾ teaspoon ground cinnamon
- 🧈 6 tablespoons unsalted butter, melted
Filling
- 3 (8 ounce) packages cream cheese, at room temperature
- 🍚 ¾ cup white sugar
- 🍋 3 medium lemons, zested and juiced
- 🥚 3 large eggs
- 2 ½ cups fresh blueberries
STEPS
Preheat the oven to 325 degrees F (165 degrees C). Grease the bottom of an 8-inch square baking pan. Place parchment paper in the pan with an overhang for easy removal.
Combine graham crackers, sugar, and cinnamon in a food processor until fine. Gradually add melted butter and pulse until it resembles wet sand. Press mixture into the pan to form a crust.
Bake crust in the oven for about 12 minutes or until set.
In a food processor, blend cream cheese, sugar, lemon zest, and juice until smooth. Add eggs one by one, mixing well after each addition.
Pour the cream cheese mixture onto the baked crust. Sprinkle blueberries evenly over the top.
Bake for 45 minutes or until the filling is set except for a slight jiggle in the center.
Cool at room temperature for 30 minutes, then refrigerate for at least 3 hours to set.
Remove cheesecake using the parchment paper overhang. Slice into 16 bars.
