INGREDIENTS
Wet Ingredients
- ½ cup shortening
- 🧈 1 cup butter, softened
- 🥚 5 egg yolks
- 🥚 5 egg whites
- 🥛 1 ¼ cups milk
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
Dry Ingredients
- 🍚 3 cups white sugar
- 🌾 3 cups all-purpose flour
- 🧂 ½ teaspoon baking powder
- 🧂 ½ teaspoon salt
- 🍫 ½ cup unsweetened cocoa powder
- 🌰 ½ teaspoon ground cinnamon
STEPS
Preheat oven to 350°F (175°C). Grease and flour a 10-inch tube pan.
Cream shortening and butter until light and fluffy, gradually adding sugar. Beat well at medium speed of an electric mixer.
Add egg yolks, one at a time, beating well after each addition.
Sift together flour, baking powder, salt, cocoa, and cinnamon.
Add sifted dry ingredients to the creamed mixture alternately with milk, beginning and ending with dry ingredients. Mix until just blended after each addition.
Stir in vanilla and almond extracts.
In a clean bowl, beat egg whites until stiff peaks form.
Carefully fold egg whites into the batter until no streaks remain. Pour batter into the prepared pan.
Bake in the preheated oven for 75 minutes or until a toothpick inserted into the center comes out clean.
Cool in pan for 10 minutes, then remove and let cool completely on a wire rack.
