INGREDIENTS
Main Ingredients
- 10 cups dried great Northern beans
- 1 pound salt pork
- 🧅 2 onions
- 2 ½ cups molasses
- 🧂 1 teaspoon black pepper
- 4 teaspoons dry hot mustard
- 🧈 ½ cup butter
STEPS
Dig a bean hole 2.5 to 3 feet deep, wide enough to have a 6-inch space around your pot. Place tire chains or stones in the hole to help retain heat.
Start a fire in the hole using dry hardwood and let burn for about 3 hours, filling with hot coals.
While the fire is burning, boil the beans on the stove with water to cover (about 45 minutes) until skins roll back when blown on.
Cut salt pork into slices and place in the bottom of the bean pot. Add halved onions on top, followed by boiled beans and their liquid.
Mix in molasses, black pepper, and mustard. Add sliced butter on top, then pour boiling water to cover beans by 1 inch.
Seal the pot with aluminum foil, secure the lid, and place it into the bean hole.
Cover the pot with coals, then pack 2 feet of dirt over it. Use a tarp or metal sheet to protect from rain.
Let the beans cook overnight (around 12 hours). Dig out the pot the next day and serve.
