INGREDIENTS
Rice Base
- 🍚 3 cups white rice
- 1 tablespoon hot sauce
- 🧄 1 teaspoon garlic powder
- 1 teaspoon onion powder
BBQ Sauce
- 1 cup barbecue sauce
Cooking Fat
- 🧈 2 tablespoons unsalted butter
Cheese
- 🧀 1/4 cup shredded Cheddar cheese
Topping
- 1 cup pulled pork
- 1/3 cup shredded tri-color coleslaw mix
- 2 tablespoons pickled red onions
STEPS
Mix rice, hot sauce, garlic powder, onion powder, and 1/2 cup barbecue sauce in a bowl.
Heat butter in a skillet, add half the rice mixture, flatten it, sprinkle with cheese, then layer the remaining rice mixture on top.
Cook over medium heat until edges crisp, about 6 minutes.
Flip the rice onto a plate, then slide back into the skillet to cook the other side for 5 minutes.
Mix pulled pork with 6 tablespoons barbecue sauce.
Slide rice onto a plate, top with pulled pork, drizzle with barbecue sauce, and garnish with coleslaw and pickled onions.
