INGREDIENTS
Main Ingredients
- 2 acorn squash, halved and deseeded
- 1 pound lean ground sausage
- 🍎 1 large apple, cored and diced
- 2 cups cabbage, shredded
Seasoning & Other
- 2 tablespoons slivered almonds
- 1 tablespoon olive oil
- 1 teaspoon sage
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
STEPS
Preheat the oven to 400°F (200°C).
Cut both acorn squash in half, deseed, and place cut-side down in a baking pan with 1/2-inch water.
Bake squash in the preheated oven for 40 minutes.
Toast the almonds in a single layer on a baking sheet for 5 minutes.
Cook sausage in a skillet over medium-high heat until browned, about 5 minutes, then drain excess fat.
Add olive oil to the skillet and sauté the onion, apple, cabbage, and pre-toasted almonds until vegetables are tender, about 10 minutes.
Mix in sage, thyme, and season with salt and pepper to taste.
Turn squash cut-side up, fill centers with sausage mixture, and bake in the oven for an additional 20 minutes.
