INGREDIENTS

- 🍗 400g chicken breast, diced
Vegetables
- 🥔 2 large potatoes, cubed

- 🍅 2 cups diced tomatoes
- 2 medium chilies, minced

Liquid
- 3 cups chicken stock
STEPS
Heat a large pot over medium heat and add a splash of oil.
Brown the chicken pieces until golden. Remove and set aside.
Sauté the onion and chilies in the same pot until softened.
Add tomatoes, potatoes, and seasonings, stirring well to combine.
Return the chicken to the pot and pour in chicken stock.
Bring to a gentle boil, reduce to a simmer, cover, and cook for 40 minutes.
Taste and adjust seasoning as needed. Serve immediately.
