INGREDIENTS
Dry Ingredients
- 1 ¼ cups herb-seasoned croutons
- 1 ½ tablespoons taco seasoning mix
- 2 tablespoons brown sugar
Sauces and Liquids
- 1 (12 ounce) jar salsa
- 1 tablespoon olive oil
- 1 tablespoon Worcestershire sauce
- 2 tablespoons barbecue sauce
Vegetables and Spices
- 🧅 1 cup finely chopped onion
- 1 jalapeño pepper, seeded and minced
- 3 cloves garlic, minced
- ¼ cup cilantro, minced
Proteins and Dairy
- 1 pound ground chicken
- ½ pound ground pork
- 1 cup shredded pepperjack cheese
- 🥚 1 egg
STEPS
Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
Mix croutons and salsa in a large bowl and set aside to soften for about 15 minutes.
Heat olive oil in a skillet over medium heat and cook onion, jalapeño, and garlic until the onion is translucent, about 5 to 8 minutes.
Combine the crouton mixture with ground chicken, ground pork, pepperjack cheese, cilantro, egg, taco seasoning, and Worcestershire sauce. Mash any unbroken croutons.
Mix the above with the cooked onion mixture and transfer to the prepared loaf pan.
Mix barbecue sauce and brown sugar in a small bowl, then brush the mixture over the meatloaf. Cover with a foil tent.
Bake in the preheated oven for about 1 hour. Remove the foil tent in the last 10 minutes of baking, ensuring the internal temperature reaches 165°F (75°C).
Remove the meatloaf from the oven, cover with foil, and let it stand for 15 minutes before serving.
