INGREDIENTS
Marinade and Chicken
- 🍋 3 tablespoons freshly squeezed lemon juice
- 🍋 1 teaspoon lemon zest
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon oregano
- 1 teaspoon garlic powder
- 🧂 2 1/2 teaspoons kosher salt, divided
- 1 teaspoon pepper, divided
- 6 chicken cutlets or 3 chicken breasts, sliced in half lengthwise
Vegetables
- 🥔 2 pounds Yukon gold or red potatoes, cut into 1-inch cubes
- 1 package green beans (microwaveable)
Toppings
- 🧈 3 tablespoons butter, divided
- 2 tablespoons mayonnaise
- 🧀 1/3 cup grated Parmesan cheese
- 🌿 Chopped fresh parsley (optional)
STEPS
Preheat the oven to 425°F (220°C).
Whisk together lemon juice, lemon zest, olive oil, oregano, garlic powder, 2 teaspoons salt, and 1/2 teaspoon pepper in a bowl until well combined.
Slice chicken in half lengthwise, pound slightly to a uniform thickness, and place in a shallow dish or resealable bag. Pour half of the marinade over chicken, toss to coat, and let marinate for 30 minutes.
Add potatoes to the remaining marinade and toss well. Transfer potatoes to a lightly greased 9x13 baking dish, season with remaining salt and pepper, and bake in the oven for 25-30 minutes, tossing halfway through.
Microwave green beans according to package directions.
Remove potatoes from the oven, add green beans, and toss together. Top with half of the softened butter. Place marinated chicken on top, reserving any leftover marinade.
In a bowl, mix reserved marinade with remaining butter, mayonnaise, and Parmesan cheese. Spread this mixture evenly on the chicken.
Bake the dish for another 20-25 minutes or until the chicken is cooked through. If desired, broil on high for 2 minutes to brown the chicken tops. Sprinkle parsley on top if desired.
