INGREDIENTS
Polenta Base
- 🌽 1 cup cornmeal
- 🥛 3 cups skim milk
- 🧂 1/2 teaspoon kosher salt
- 1 tablespoon olive oil
Toppings
- 🐄 5 ounces lean ground beef
- 1 1/2 cup red chile sauce
- 🧀 1 cup Mexican shredded cheese blend
- 1 cup shredded lettuce
- 2 tablespoons black olives
- 2 tablespoons sour cream
STEPS
Combine cornmeal, milk, and salt in a medium saucepan and cook over medium-high heat, stirring constantly, until the mixture thickens and pulls away from the sides of the pan (about 15 minutes). Remove from heat, stir in olive oil, and spread onto a greased cookie sheet. Refrigerate for 1 hour.
Preheat the oven to 400°F (200°C).
Bake the cooled polenta crust for 10 to 15 minutes in the preheated oven.
Cook ground beef in a nonstick skillet over medium-high heat until browned and crumbly (5 to 7 minutes). Add red chile sauce and simmer until thickened (about 10 minutes).
Top the polenta crust with the meat sauce and shredded cheese. Bake again in the oven for 10 to 12 minutes until the cheese is melted.
Garnish with shredded lettuce, black olives, sour cream, and additional shredded cheese as desired. Serve warm.
