INGREDIENTS
Vegetables
- 🍠 1 sweet potato, peeled and diced (about 2 cups)
- 🧅 1 onion, diced
- 1 bunch kale, stems removed and chopped
Oil and Seasonings
- 2 tablespoons olive oil
- 1/4 cup apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon honey, or to taste
Protein
- 🥓 4 strips bacon, cooked and crumbled
Optional
- 1/2 cup sunflower seeds
STEPS
Preheat the oven to 400°F (200°C). Line a 12x18-inch rimmed baking sheet with parchment paper.
Peel and dice sweet potato into 3/4-inch pieces, dice the onion, and combine with olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
Bake in the preheated oven until sweet potatoes are fork tender, about 20 minutes. Remove and let cool.
Cook bacon in a skillet over medium heat until crisp (5-8 minutes). Crumble and set aside. Reserve the bacon fat for the dressing.
Rinse and dry kale thoroughly. Chop into bite-sized pieces and place in a large salad bowl.
In a jar with a lid, combine bacon fat (or other oil), apple cider vinegar, Dijon mustard, honey, salt, and pepper. Shake to create the dressing.
Mix kale, roasted sweet potatoes, and onions. Pour dressing over the top, toss to coat, and garnish with crumbled bacon and sunflower seeds (if using).
