INGREDIENTS
Filling
- 🧈 3 tablespoons unsalted butter
- 1 pinch salt
- 🧅 1/2 cup diced onions
- 🥕 1/3 cup diced carrots
- 1/3 cup diced celery
- 1/3 cup all-purpose flour
- 2 cups chicken broth
- 1/4 cup cream
- 1 cup cubed ham
- 1 teaspoon minced fresh rosemary
- 1/4 teaspoon freshly ground black pepper
- 1 pinch cayenne pepper
- 1/4 cup water
- 1/2 cup frozen peas
Crust
- 2 1/4 cups all-purpose flour
- 1 teaspoon kosher salt
- 🧈 8 tablespoons unsalted butter
- 1/2 cup plus 1 tablespoon water, or as needed
- 🥚 1 large egg
- 1 teaspoon water
STEPS
Melt butter and sauté onions, carrots, and celery until onions turn translucent.
Stir in flour and cook until mixture turns golden brown. Gradually pour in chicken broth and stir until thickened.
Add cream, ham, rosemary, black pepper, cayenne, and water. Simmer for 10 minutes. Stir in peas. Refrigerate until needed.
Preheat oven to 400°F (200°C). Line a sheet pan with foil.
Combine salt and flour, and mix hot melted butter and water into it to form dough.
Roll dough into a circle, shape into discs for ramekins, and line ramekins with dough.
Fill ramekins with ham mixture and cover with top crust. Seal edges and vent steam hole.
Brush with egg wash and bake until golden brown, about 1 hour.
