INGREDIENTS
Sauce
- 1/4 cup packed light brown sugar
- 3 tablespoons soy sauce
- 2 tablespoons wine or rice vinegar
- 1/8 teaspoon white pepper
- 1/2 cup tap water, divided
Protein
- 1 1/2 pounds boneless, skinless chicken thighs
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Aromatics
- 1 1/2 tablespoons fresh ginger
- 2 cloves garlic, chopped
Thickener
- 2 teaspoons cornstarch
- 1 tablespoon olive oil
Side
- 2 cups white rice, for serving
STEPS
Gather all ingredients.
Prepare the sauce mixture by whisking together brown sugar, soy sauce, Shaoxing wine, white pepper, and 1/2 cup of water; set aside.
Thinly slice scallions and separate white and light green parts from dark green parts; set aside.
Heat oil in a skillet over medium-high heat. Season chicken on both sides with salt and black pepper and cook until golden brown (about 10 minutes on one side and 5 minutes on the other), then set aside and cover loosely.
Add ginger, garlic, and reserved white/light green scallion parts to the skillet and sauté until fragrant and lightly toasted, about 3-4 minutes.
Whisk together cornstarch and the remaining 1 tablespoon water. Add cornstarch mixture and soy sauce mixture to the skillet, bring to a boil over medium-high heat, and simmer until thickened, about 1 minute.
Return the chicken to the skillet, toss to coat with the sauce, and garnish with sesame seeds and dark green scallion parts.
Serve over white rice.
