INGREDIENTS
Meringue
- 🥚 8 egg whites
- 🧂 1 ¾ cups white sugar
- 5 ¼ cups almond meal
- 1 teaspoon ground cinnamon
- Zest from 1 lemon
- 1 teaspoon vanilla extract
Buttercream Filling
- 🧈 3 ½ tablespoons butter
- 🧂 1 ¼ cups confectioners' sugar, sifted
- ¼ teaspoon vanilla extract
Chocolate Coating
- 🍫 4 ounces bittersweet chocolate, chopped
STEPS
Beat egg whites until foamy in a large bowl. Gradually add white sugar, continuing to beat until stiff peaks form. Fold in almond meal, cinnamon, lemon zest, and vanilla extract.
Line a baking sheet with parchment paper. Transfer meringue mixture to a piping bag and pipe into 3-inch ladyfingers. Let dry at room temperature for 2 hours.
Preheat oven to 320°F (160°C). Bake cookies for 15 to 20 minutes on the middle rack until dried but not browned.
Cream butter and confectioners' sugar until smooth. Stir in vanilla extract. Melt chocolate in a double boiler, stirring regularly to avoid scorching.
Spread buttercream on the back of one cookie, sandwich it with another cookie, and dip both ends in melted chocolate. Let cookies dry on wax paper or parchment.
