INGREDIENTS
Protein
- 4 (8 ounce) chicken thighs
Seasonings
- 1 teaspoon black pepper
- 🧂 1 3/4 teaspoons kosher salt
- 1 teaspoon fresh thyme
- 1 teaspoon fresh tarragon
Oils & Fats
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
Vegetables
- 8 ounces cremini mushrooms
- 2/3 cup shallot
- 4 cloves garlic
Liquid & Brines
- 1 tablespoon tomato paste
- 1/2 cup sweet vermouth
- 🍅 1 (15 ounce) can diced tomatoes
- 1 1/2 cups chicken stock
STEPS
Preheat oven to 375°F (190°C). Pat chicken dry, season both sides with 1 1/4 tsp salt and pepper. Heat oil in a cast-iron skillet over medium heat. Sear chicken skin-side down for 8-10 minutes until crispy, then flip and cook 2 minutes. Transfer chicken to a plate.
Remove all but 2 tbsp of drippings from skillet. Sauté mushrooms over medium-high heat for 4 minutes undisturbed. Stir in shallots and cook 4 minutes. Add tomato paste and garlic, cooking for 1 minute. Add 1/2 cup vermouth, stirring until nearly reduced, about 1 minute.
Add diced tomatoes, stock, and remaining 1/2 teaspoon salt to skillet. Nestle chicken thighs skin-side up in the mixture.
Bake chicken and sauce, uncovered, in the oven until a thermometer indicates 175°F (79°C), about 22 minutes. Remove chicken to a platter.
Reduce mushroom sauce over medium-high heat until thick, 8-10 minutes. Stir in thyme, tarragon, butter, and remaining vermouth. Nestle chicken back into sauce.
