INGREDIENTS
Dough
- 💧 2 cups water
- 1 packet (0.25 ounce) active-dry yeast
- 🧂 1/2 teaspoon sugar
- 2 tablespoons olive oil
- 🧂 1 tablespoon kosher salt
- 3 cups all-purpose flour
- 2 cups bread flour
Toppings
- 🧅 1 small onion
- 🍖 1/2 pound ground beef
- 🧀 1 cup sharp Cheddar cheese
- 2 spears dill pickle
STEPS
Pour water into a large bowl and sprinkle yeast and sugar on top. Mix briefly, then let sit until the yeast blooms (about 10 minutes).
Stir in olive oil and salt. Add all-purpose and bread flour, stirring until no dry streaks remain.
Cover and allow dough to rise for 45 minutes. Perform ‘stretch and fold’ technique every 30 minutes, repeating 4 times over 2 hours.
Lightly oil a 9x13 metal pan and stretch dough into all corners. Cover and let rise for an hour.
Preheat oven to 450°F (230°C). Sauté onions in olive oil for 3-4 minutes. Add ground beef, season with salt and pepper, and cook until browned (about 5 minutes). Drain and cool.
Drizzle focaccia with olive oil, dimple the surface, and layer cheese evenly. Add cooked onions and beef.
Bake in preheated oven until golden brown and bubbly, about 25-30 minutes.
Let rest in the pan for 10 minutes, then transfer to a cutting board to cool for another 10 minutes. Sprinkle chopped pickles before serving.
