INGREDIENTS
Filling and garnish
- 🥛 2 cups heavy cream
- ½ cup confectioners' sugar
- ½ cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- Confectioners' sugar for dusting
Cake base
- 🥚 6 egg yolks
- ½ cup white sugar
- ⅓ cup unsweetened cocoa powder
- 1 ½ teaspoons vanilla extract
- ⅛ teaspoon salt
- 🥚 6 egg whites
- ¼ cup white sugar
STEPS
Preheat the oven to 375°F (190°C) and line a jellyroll pan with parchment paper.
Whip cream, confectioners' sugar, cocoa, and vanilla in a large bowl until thick and stiff, then refrigerate.
Beat egg yolks with sugar until pale, light, and frothy. Blend in cocoa powder, vanilla, and salt.
Whip egg whites until soft peaks form, gradually add sugar, and beat until stiff peaks form.
Fold yolk mixture into whipped egg whites.
Spread batter evenly into the prepared pan.
Bake for 10 to 12 minutes until cake springs back when lightly touched.
Dust a clean dishtowel with confectioners' sugar and turn the warm cake out onto it. Remove parchment paper.
Roll the cake up with the towel starting from the short edge, and let cool for 30 minutes.
Unroll the cake and spread filling to within 1 inch of the edges.
Roll the cake up again with filling inside and place seam-side down onto a serving plate. Refrigerate until serving.
