INGREDIENTS
Vegetables
- 🥬 6 cups cabbage, shredded
- ½ cup fresh bean sprouts
- 1 celery stalk, diced
- 🧅 2 tablespoons chopped onion (optional)
Proteins
- 🥚 1 large egg, beaten
- 🦐 1 (4 ounce) can shrimp, drained
Seasonings
- 2 tablespoons soy sauce
- ⅛ teaspoon garlic powder
- Black pepper to taste
Other
- 2 tablespoons cornstarch, divided
- 💧 2 tablespoons cold water
- 20 egg roll wrappers
Frying
- Vegetable oil, as needed
STEPS
Gather all ingredients.
Mix cabbage, bean sprouts, celery, and onion together in a large bowl.
Stir in shrimp, soy sauce, garlic powder, and pepper.
Heat 1 teaspoon oil in a nonstick skillet over medium heat. Add egg and cook, without stirring, until set on both sides, 1 to 2 minutes.
Transfer to a cutting board and finely chop the egg.
Stir in chopped egg to the mix. Sprinkle 1 tbsp cornstarch and let sit for 10 minutes.
Mix water and 1 tbsp cornstarch in a small bowl to form a sealing paste.
Place an egg roll wrapper on a surface. Add 2–3 tablespoons filling in the center. Seal edges with cornstarch paste, and roll tightly.
Heat vegetable oil in a fryer to 350°F (175°C). Fry the rolls in batches for 2–4 minutes until golden brown.
Drain fried rolls on paper towels before serving.
