- 2 large zucchini, sliced
- 2 large yellow squash, sliced

- 1 medium red bell pepper, sliced

PASSOS
Preheat the oven to 400°F (205°C) with rack in the top position. Line a baking sheet with parchment paper.
Place zucchini, yellow squash, onion, and bell pepper in a large bowl. Add olive oil, 2 teaspoons Italian seasoning, salt, and black pepper; toss to coat.
Spread vegetables in a single layer on the prepared baking sheet; season with more Italian seasoning if desired.
Bake in the preheated oven on the top rack until vegetables are crisp-tender, about 15 minutes. Squeeze with lemon juice before serving.
