Dough
- 🌾 3 cups all-purpose flour
- 🧂 1 teaspoon salt
- ½ teaspoon baking powder
- 🧈 1 cup butter
- 🥚 2 eggs
- 2 teaspoons distilled white vinegar
- 💧 ½ cup water
Filling
- 1 cup dry lentils
- 🥔 3 potatoes, chopped
- 🧅 1 onion, chopped
- 1 tablespoon olive oil
- 🧂 1 teaspoon salt

Preheat oven to 350 degrees F (175 degrees C).
Mix flour, salt, and baking powder together in a bowl. Cut in butter. Stir in eggs, vinegar, and ½ cup water. Form into a ball of dough.
Bring 3 cups of water to a boil. Add lentils and cook for 30–45 minutes until tender.
Wrap potatoes in aluminum foil and bake for 30 minutes. Cool and chop them into small pieces.
Sauté onions in olive oil. Mix onions, potatoes, lentils, and season with salt.
Divide dough into 6–8 inch circles. Place filling in the center of each circle, fold, and seal edges.
Bake pasties on a cookie sheet for 1 hour.
