- 2 cups almond flour

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Lightly grease a baking sheet or line it with parchment paper.
Combine the brown sugar, baking soda, salt, and butter. Mix until smooth.
Add the vanilla extract, egg, and almond flour to the mixture. Stir to combine the ingredients, then mix at medium speed for 1 minute.
Fold in the chocolate chips using a spatula or spoon.
Scoop one level tablespoon of dough per cookie onto the baking sheet. Flatten each cookie to about 3/8-inch thick.
Bake the cookies for 9 to 12 minutes until golden brown.
Remove from oven and allow to cool for 2 minutes on the baking sheet. Transfer cookies to a cooling rack to cool completely.
