Boil water in a large pot, add 1/2 tsp salt, and blanch the amaranth greens for 1.5–2 minutes.

Rinse the blanched greens in cold water 2–3 times to clean thoroughly.

Squeeze out excess water from the greens and cut them into bite-sized pieces.

Combine the greens with minced garlic, gochujang, sugar, Yeondu, sesame oil, and sesame seeds.

Taste and adjust seasoning with a pinch of salt if needed.
