INGREDIENTS
Spices & Seasoning
- 2 teaspoons chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 🧂 1 teaspoon salt, or to taste
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper, or to taste
Meat & Seafood
- 🥩 1 pound sirloin steak, sliced 1/4-inch thick across the grain
- 🍤 16 medium shrimp, peeled and deveined
Fresh Produce
- 1/2 cup fresh cilantro sprigs
Oils & Condiments
- 3 tablespoons olive oil, divided
Bread & Grains
- 🌮 8 (8-inch) flour tortillas
STEPS
Preheat the oven to 425°F (220°C). Line 2 sheet pans with parchment paper or aluminum foil.
Mix chili powder, smoked paprika, oregano, salt, cumin, garlic powder, and cayenne together in a small bowl.
Toss green bell pepper, red bell pepper, and onion with 1 1/2 tablespoons olive oil and half of the seasoning mixture. Spread them evenly on one prepared pan.
Toss steak and shrimp with the remaining olive oil and spices in the same bowl. Spread steak on one side of the second pan and shrimp on the other.
Cook vegetables and steak/shrimp pans on separate racks for 10 minutes. Then, swap their positions and roast for another 5 minutes or until shrimp is pink, steak cooked to medium, and vegetables tender.
Squeeze lime juice over both sheet pans. Assemble fajitas with steak strips, shrimp, vegetables, tortillas, and cilantro.
