STEPS
Preheat the oven to 350°F (175°C). Grease two 9x5-inch loaf pans.
Stir together self-rising flour, ground cinnamon, salt, and ground nutmeg in a medium bowl until blended. Set aside.
Whisk sugar, eggs, vegetable oil, melted butter, honey, and vanilla extract in a large bowl until well combined.
Stir in zucchini, chopped walnuts, and flaked coconut. Add the dry flour mixture and stir until the batter is well combined. Divide batter equally between the two loaf pans.
