INGREDIENTS
Filling
- 🧂 ½ cup white sugar
- 1 tablespoon cornstarch
- 💧 1 cup water (or 1/2 cup for thicker filling)
- 🍓 3 cups fresh ripe strawberries, hulled
- 🧈 2 tablespoons butter, diced
Topping
- 🌾 1 cup all-purpose flour
- 🧂 1 tablespoon white sugar
- 1 ½ teaspoons baking powder
- 🧂 ½ teaspoon salt
- 🧈 3 tablespoons butter
- 🥛 ½ cup heavy whipping cream
STEPS
Preheat the oven to 400°F (205°C) and grease a 2-quart baking dish.
Combine sugar, cornstarch, and water in a saucepan. Cook over medium heat, stirring constantly, until thick and hot. Stir in strawberries, and remove from heat. Pour the mixture into the baking dish and dot with diced butter.
Sift flour, sugar, baking powder, and salt together. Cut in butter using two knives or a pastry blender until the mixture resembles coarse crumbs. Stir in heavy cream until the mixture is fairly soft.
Spoon the topping mixture onto the strawberry filling.
Bake in the preheated oven until the cobbler topping is golden brown and the filling is bubbly, about 25 minutes.
