INGREDIENTS
Dry ingredients
- 4 ½ cups unbleached all-purpose flour
- 1 tablespoon active dry yeast
- 2 teaspoons dried Italian herbs
- 1 ¼ teaspoons kosher salt
Liquids
- 💧 1 cup warm water (110°F)
- 🥛 1 cup warm milk (110°F)
- ¼ cup olive oil
- 1 tablespoon olive oil
Decorative toppings
- 🍅 5 cherry tomatoes, halved
- 4 spears pickled asparagus, drained
- 3 jarred roasted red peppers, drained and sliced
- 🌶 3 mini bell peppers, sliced
- 3 Kalamata olives, pitted and halved
- 2 sprigs fresh dill
- 1 sprig fresh sage
- 1 sprig fresh parsley
- 1 sprig fresh basil
- 1 tablespoon pine nuts
- 1 tablespoon pepitas
- 1 tablespoon olive oil
- 1 pinch flaked sea salt
STEPS
Combine 2 cups flour, yeast, dried Italian herbs, and salt in the bowl of a stand mixer fitted with the paddle attachment. Add warm water, warm milk, and 1/4 cup oil; beat until well combined, about 2 minutes. Gradually add remaining flour until dough is soft and sticky.
Scrape down the sides of the bowl, drizzle with 1 tablespoon oil, cover with plastic wrap, and let rise at room temperature until doubled in size (about 1 hour).
Oil an 11x17-inch baking sheet, turn dough out, and gently spread it to fit the sheet. Dimple the surface with your fingers and let rest uncovered for 15 minutes.
Preheat the oven to 450°F (230°C) and place an oven rack in the lower third.
Decorate the dough surface with toppings (tomatoes, asparagus, roasted peppers, etc.), brush with olive oil, and sprinkle with sea salt.
Bake at 450°F for 15 minutes. Lower the temperature to 350°F (175°C) and bake an additional 20 minutes, until golden and springy. Cool for 5 minutes in the pan, then transfer to a wire rack and serve at room temperature.
